    • Underpinning these improvements is Borgo’s outstanding organic farm, the foundation of the “farm-to-plate” philosophy the estate has championed since its inception. Home to some 200 vegetables and 50 herbs, along with an artisanal dairy that crafts cheese from the milk of Borgo’s 300 sheep, the farm serves as a source of inspiration and ingredients for the resort’s two onsite restaurants, Michelin-starred Saporium and cosy all-day eatery Trattoria Sull’Albero. The estate also houses a range of sustainable sources: from honeyed apiaries and free-range chicken coops to the local pigs that roam its forests and the woolly alpaca and peacocks that delight guests with their antics. Upon arrival, all guests are invited on a guided tour of the grounds led by Estate Manager, to discover how these various facets collectively power Borgo Santo Pietro’s incomparable magic.
